Chipotle Pasta

½ C finely diced onion
2 chipotle peppers in adobo sauce
1 fresh corn on the cob, kernels removed
1 C drained black beans
2 C grilled chicken, sliced thin
¼ C chopped fresh cilantro leaves
2 14oz cans Muir Glen Fire roasted tomatoes
½ C heavy cream
Garlic salt, pepper
Prepare pasta and set aside.
Heat 2 T olive oil into large 5 qt skillet over med heat. Add onion, chipotle, corn, and beans. Cook 5 minutes until softened. Stir in cooked chicken and cilantro leaves until heated through, reduce to low and set aside.
Place both cans of tomatoes in food processor and pulse until almost smooth. Pour into chicken mixture. Stir in cooked pasta. Stir in heavy cream, salt, pepper to taste. Cook until heated through and garnish with additional cilantro.
