Chicken & Broccoli

I recently made the winning recipe, "Fireside Chicken & Broccoli over Rice" for the family, who truly enjoys this dish. My 5-year-old, will ask, "Mom, are we having Chicken and Rice for dinner?" Then if the answer is, "Yes" he does the cutest little dance and chants, "We're having chicken and rice, chicken and rice!" My little Mr. Tyreeq!

So, on to my photo recipe demonstration
Let's jump right in!

(Note: I decided to use diced chicken thighs on this particular day to switch things up a little and was really flavorful!)

Ingredients pictured, except for butter and extra virgin olive oil

Add extra virgin olive oil, turn heat to med-high, then add chicken. Cook chicken just short of done.

Set chicken aside.

To the same pan add butter and onions to skillet

Once onions have softened, add minced garlic and blend.

Add the tomato paste. Then blend well.

Add flour and blend well while continuing to cook.

Add chicken stock slowly and whisk well.

Then add rosemary, once a boil begins.

Add chicken to pan, reduce heat and simmer for 40 minutes or until desired thickness.

Add broccoli during the last 5 minutes of cooking for crispness. Cook rice as directed.

Plate up and serve!! Yum-a-licious!!
