Pumpkin Bars
4 eggs
1 2/3 c. sugar (I used 1 c.)
1 c. oil (I substituted with apple sauce)
1 (16 oz) can pumpkin
2 c. flour
2 tsp. baking powder
2 tsp. cinnamon
(I added 1 tsp. nutmeg and ground cloves)
1 tsp. salt
1 tsp. baking soda
Beat together eggs, sugar, oil (or applesauce), and pumpkin until fluffy. Stir together flour, baking powder, cinnamon, salt, soda (and ground cloves and nutmeg). Add pumpkin an mix thoroughly. Spread in ungreased 15x10x1 inch pan. Bake at 350 for 25-30 minutes. Cool and frost with cream cheese frosting.
Cream Cheese Icing
1 (3 oz) pkg. cream cheese, softened
1 tsp vanilla
1/2 c. margarine
2 c. powdered sugar (I used 1 c.)
Cream together cream cheese and butter; stir in vanilla. Add powdered sugar a little at a time. Beat well until smooth. Sprinkle with chopped nuts, if desired.
