Oatmeal raisin walnut cookies




Best Oatmeal Raisin Walnut Cookies

1 1/2 c all-purpose flour
1 t baking soda
1 t cinnamon
1/2 t salt
1/4 t nutmeg
1 1/4 c butter, room temp
3/4 c firmly packed brown sugar
1/2 c white sugar
1 large egg
1 t vanilla
3 c Quaker oats, not instant (quick or old fashioned is fine)
3/4 c raisins (place boiling water for about a minute to plump up)
1/2 c toasted walnuts, chopped


Preheat oven 350 degrees F.
In a medium bowl, blend together flour, baking soda, cinnamon, salt and nutmeg.
In a mixing bowl, cream butter and both sugars until light and fluffy (high speed). Reduce to medium speed and add egg and vanilla.
Gradually add in the flour mixture. Stir in oats, raisins and nuts BY HAND. ( if you use a mixer, a big glob gets pushed to the bottom of bowl so you end up stirring it by hand anyway.)
Drop teaspoonfuls onto cookie sheets. (most cookie recipes say ungreased, personally, I grease them all anyway.)
Bake about 8 min for chewy and about 10 for crisper. You really have play around with the time to get the chewiness/crispiness that you like best. Cool for at least one minute before transferring to a wire rack to completely cool.
Yeah, as if your kids (and you) can actually wait that long. At least not for the first batch.
