Acqua Pazza
2pds Fish Fillets
4 Parsley Springs-Whole&Washed
1 Spring Marjoram
1 Bulb Fennel-thinly sliced
2 Garlic Coves, sliced
1tsp Red Pepper Flakes
1 Bulb Spring Onion/Mild Scallion
1/4c Extra Virgin Olive Oil
1/2c prepared Tomato Sauce
1/2 Pint Grape Tomatoes
Salt&Pepper
Preheat Oven to 375
Stainless Steel Pan, heat 1/4 cup olive oil until smoking. Add parsley, marjoram, fennel, garlic, red pepper flakes, spring onions. Saute for 1 minute then add the fish fillets.
Add tomato sauce, grape tomatoes and season with salt and pepper and cover lid. Allow to cook 15-20min in pan.
Place entire pan into preheated oven for 10min.
To check fish for doneness, fish should feel firm to touch.
