Pumpkin Cake

Pumpkin Cake

2 cups sugar

15 oz. can of pupkin

4 eggs

1 cup oil

2 cups flour

2 tsp. baking soda

½ tsp. cinnamon

½ tsp. salt

In a mixer, combine sugar, pumpkin, eggs and oil. Mix until well blended. Then add dry ingredients. Pour into a large greased cookie sheet. Bake at 350 degrees for 30 minutes. Let cool and frost with cream cheese frosting.

Cream Cheese Frosting

6 oz. cream cheese

1 stick butter

1 Tbsp. vanilla

4 cups powdered sugar

Cream together the cream cheese and butter. Then add vanilla and sugar. Mix until smooth. If too thick, just add a little milk.

  2. I make something VERY similar (we call them pumpkin bars) every Thanksgiving and I look forward to them all year!! :)
