Rhubarb Bread
Ingredients for the bread:
1 1/2 C. brown sugar
2/3 C. oil
1 egg
1 C. sour milk (vinegar method)*see below
1 tsp. salt
1 tsp. baking soda
1 tsp. vanilla extract
3 C. flour
1 1/2 C. diced rhubarb (I used 2 cups)
1/2 C. nuts (I left this out because I don't like nuts)
Mix all ingredients and pour into 2 greased loaf pans (I only have 1 loafpan so I made the rest in a 8" x 8" pan).
Ingredients for the topping:
1 C. sugar
2 tbsp. butter
cinnamon
Put these three ingredients into a small bowl and use a fork to cut the butter into the other ingredients, it should eventually be in little tiny pieces and all mixed up with the sugar and cinnamon. Sprinkle mixture on top of unbaked bread.
Bake at 325 degrees for 60 minutes (may need to go a little longer depending-on your oven, I had to cook mine for about 80-90 minutes).
