Chicken Tomatillo Soup



Even my kids will eat it. It doesn't look like much, but it is so yummy! - and it's the easiest soup I've ever made. It only takes 30 mins. After the chicken comes out of the crock pot.

Chicken Tomatillo Soup
shredded chicken (about 2 breasts)
4 cups chicken broth
1 can beans (you choose, I use black)
1 can corn
1 medium onion diced
3 tomatillos chopped
4 garlic cloves, chopped
1 can diced tomatoes and liquid
1/4 cup cilantro
1 tsp cumin
1/2 tsp paprika
1 bay leaf
Top with whatever you want-cheese, avocado, etc.
Cook chicken in water, set aside and shred. Add cooking spray to soup pot, and set over medium heat. Add onions and tomatillos, and cook till the onions are just turning brown. Add garlic cook 2 minutes. Next add tomatoes, beans, corn, chicken, cumin, paprika, bay leaf, and chicken broth. Bring to a boil, reduce and simmer for 10 minutes. Remove bay leaf and eat!
