Three Bean Chili

1 tsp. vegetable oil 1 can black beans (drained)
1 lb. ground beef 1/4 tsp. cajun pepper
1/2 med. onion, chopped 1 can whole tomatoes (undrained)
1 clove garlic, chopped 1 1/2 tsp. dried oregano
1 can kidney beans (drained) 3 Tbs. cajun style bbq sauce
1 can garbanzo beans (drained) grated parmesan
sour cream
In a skillet add vegetable oil and sauté onion and beef. Add garlic and sauté for 3 minutes. In a 3 to 4 quart sauce
combine drained beans, beef, whole tomatoes, oregano, bbq sauce, & cajun pepper. Bring to boil, reduce heat. Cover
and cook gently for 2 hours. Serve with Parmesan and a dab of sour cream. (You can cook it in a crock-pot all day).
